Asparagus Parmesan Puff Pastry



14 5×5″ LBA puff pastry squares
10 oz. freshly grated parmesan cheese
28 (3/4 in. think) asparaguses, trimmed to about 1″ lengths
3 tbsp. truffle oil


( Serves: 14 )

1. Cut 5×5 squares in half, egg wash, sprinkle parmesan cheese leaving ½ inch on long sides.

2. Lay an asparagus stalk and roll up in puff pastry pressing the edge to seal.

3. Bake at 400°F until golden, cut in half and stand on edge.

4. Sprinkle with truffle oil before serving.
